How to use
Use only to garnish canapées, sliced cold meat or fish and other cold dishes for the cold buffet. Important: Do not use for tureens, pies or making jelly mirrors for cold buffets.
Preparation
Manual application (using a ladle): Bring water to boil. Stir in the required amount of powder, using a whisk and boil for 5 seconds, stirring all the time. Cool down to the processing temperature, i.e. 35° to 45°C. Machine application (using a gel sprayer): Stir the required amount of product into cold water, stirring well with a whisk. Stir until smooth and leave to swell for at least 1minute. Transfer to the sprayer container, heat up to at least 85° to 90°C and then spray the food, which should be thoroughly cooled, with Aspix Gel (gelling).
